Mullet.


So I got my hair cut yesterday...and it didn't come out quiet the way I wanted....in fact I now have a mullet. I'm not going to take any pictures of it but trust me, it's a mullet. But with lemons come lemonade so I'm going to be wearing it up in this little do for now on. Which I think looks pretty cute.

I look mad in this picture but I'm really just tired.

I went and bought like every color bandana I could find. I got black and red also but there not pictured. I also got tons of bobby pins, headbands, and hair spray.

New Shoes!

Aren't those awesome!! I bought these yesterday from emandsprout.etsy.com!! I am so freaking excited about these shoes, I can't wait to get them in! 

Jogging.


I started jogging today! It was only half a block but it's a start. I haven't jogged, no joke, since Jr. High athletics! Let's just say that I was feeling it even after just that little bit. I'm now only 27 pounds away from goal and I feel that jogging will help me get there even faster. I'm pretty proud about this little step because 55 pounds ago there would have been no way I would have been able to jog even if I wanted too!


And onto another little step....I bought this dress for a wedding this weekend. I haven't worn a dress since my own wedding almost two years ago! But whats even crazier is that it's a size MEDIUM!! I don't remember the last time I wore a medium ANYTHING! So I'm pretty happy.
BTW I got this dress from Forever 21, which is slowly becoming my new favorite store.

Why do I love to blog?

Crustless Spinach Quiche.


Crustless Spinach Quiche

This is an adapted recipe from allrecipes.com:

1 tablespoon vegetable oil
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 roma tomatoes, chopped
1 1/2 cups mushrooms, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs, beaten
1 1/2 cups shredded Cheddar cheese
1 1/2 cups shredded Swiss cheese
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Preheat oven to 350 degrees F.
Heat oil in a large skillet over medium-high heat. Add veggies and cook, stirring occasionally, until veggies are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine eggs, cheeses, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared deep dish pie pan.

Bake in preheated oven until eggs have set, about 35-45 minutes. Let cool for 10 minutes before serving.

This quiche is very customizable. You could add or take away anything you'd like. I didn't use a deep dish pie pan because I didn't have one handy and because of that some of the egg mixture ran over so I would really suggest using a deep dish pie pan.

Mint Chcolate Chip Cupcakes.


I'm trying out new cupcake flavors so I decided to make some cupcakes for Jay to take to work. I used the chocolate cupcake recipe from joyofbaking.com but I added 1 1/2 teaspoons mint extract. I also used the vanilla buttercream recipe but I added 1 1/2 tablespoon mint extract and some kelly green food coloring paste, on top I added mini chocolate chips! They were super good and very minty!!
